Flavor Profile
Soft and crystalline, light straw color, with aromas reminiscent of lemon blossom, hyacinth and fennel. It is an elegant wine with a lively character, a strong element of minerality, rich body, wonderful flavor balance, and an intense and long aromatic aftertaste.
Winemaking
Cooling of incoming grapes to 10°C in a cooling chamber, manual sorting on a sorting table, decanter, gentle pressing program in an inert atmosphere, static settling with parallel cooling of the must, alcoholic fermentation with selected yeast strains at a very low temperature of 14-18°C, battonage and stirring of fine lees to improve volume.
