Flavor Profile

Bright white-yellow color. Elegant and complex aroma characterized by fresh herbs, white-fleshed peach, while the minerality of the variety blends perfectly with the woody notes and aromas of the wood. Full and oily in the mouth with nerve, crisp acidity and a long tasty finish.

Winemaking

Selection of Vidiano grapes from semi-mountainous areas of Crete in the vicinity of Dafna. Harvested at the lowest possible temperatures of the day. Strict hand-sorting during delivery. Typical white vinification with wholebunch pressing. Alcoholic fermentation at controlled temperatures using selected yeast strains. Wine maturation in the tank and in oak barrels with stirring of the fine lees after the end of fermentation until bottling.
