Flavor Profile
Rich, deep ruby color with blue highlights. Its aroma combines forest fruits, blackberry, plum and spices. Very smooth in the mouth with velvety tannins, full mouth with volume and a warm sweet finish.
Winemaking
The vinification of the 2 varieties is done separately in stainless steel tanks by cold-extraction 24-48 hours before fermentation begins. Fermentation is controlled at a constant relatively low temperature and lasts 10-12 days. Gentle extraction and management of the cap by maceration is done, followed by malolactic fermentation. The wines mature on the fine lees to acquire their rich structure until bottling.
